Day Food Recall
Student Learning Outcome #1: Nutrition Tracking and Estimation
Using a modified Appendix C, students must complete an assessment of energy and nutrient intake/ 7-day food recall on themselves. Students must follow the steps in Appendix C to determine a complete dietary record.
Measure: Students will identify, track, and evaluate their nutrition for 7 days.
Achievement Target 1: 100% of students will identify, track, and evaluate their nutrition for 7 days.
Assessment: 7-Day Caloric and Nutrient Intake (From Appendix C table C.1), Daily and Average Summary Chart of the Intake of Calories and Specific Food Nutrients (table C.2), RDA Values for Selected Nutrients Including Computations for Deriving the Percent of RDA from Your Dietary Survey Values Listed in Table C.1 are 100% Values for Graphing your Dietary Survey (table C.3), bar graph to illustrate the food and nutrient intake expressed as a percentage of recommended values (figure C.1).
